Chef to many Premier League footballers, Jonny Marsh, recreates the dish so that viewers can make their own version of Riyad Pasta at home.

Recipe:
For Caramelised onion:
3 white onions
25g salted butter
Remove the top and root of the onion and cut in half
Slice as thin as you can and place in a hot pan with a little bit of oil and the butter
Slowly cook the onions until soft and caramelised, this will take around 40 minutes to reach the desired colour
For Pasta:
200g Type 00 Flour
200g Fine Semolina
Olive Oil
Salt
20 Egg Yolks
Mix the flour and semolina and salt mix together
Add your oil and egg yolks and using the stand mixer with the paddle attachment, mix until the dough as come together
Knead on your counter until smooth, takes around 10 minutes
Then clingfilm and leave to rest in the fridge for 2-3hrs
Once rested, cut the ball in half and using a rolling pin roll the dough out till it’s around 1cm thick
Then on the pasta machine, on the lowest number (0) pass the dough through using the lever
Keep going until you reach level 5
Then once you’re at this point, using the Tagliatelle/Linguine attachment, again run your dough through it to make the pasta shape you want
I like to then leave the pasta to dry out for a couple of hours before cooking
For Pasta Sauce:
2 Egg Yolks
1.5 tbsp Grated Parmesan
Mix ingredients together and set aside
For Chicken:
Remove the breast from the chicken carcass and place inside the airfryer
Then cook at 180° for 15minutes to ensure the skin is crispy and the chicken is cooked through
To serve:
Place the pasta into boiling water for 30-45 seconds, then drain and place into the sauce and mix
Using a carving fork, place the pasta on the fork and twirl the fork until the pasta forms a long meat cylinder shape
Add the onions on top and the crumbles feta cheese
Finish with micro herbs if you have them
