After going behind early on to a Rhys Bennett header, the City youngsters rallied and showed no mercy in a second-half performance full of real quality.
Borges pulled City level just before the break with the winger adding a further three goals after the interval.
Dire Mebude and Will Dickson also found the back of the net as we returned to the top of the Premier League 2 table.
WHAT HAPPENED
It was a fast start by both sides but it was United who took the lead early on.
A deep corner was headed back across goal by Omari Forson who found team-mate Rhys Bennett at the far post with the defender nodding home inside five minutes.
City had the ball in the back of the net themselves moments later, but the assistant referee’s flag denied Will Dickson a derby day goal after Shea Charles’ initial effort rebounded off a post.
Kian Breckin looked lively and almost found a way back into the game, his shot was saved by Radek Vitek after Borges found the midfielder on the edge of the United box.
Our pressure finally paid off as we found the leveller moments later, Borges as clinical as ever took one touch to set himself before finding the bottom-right corner of the goal.
Down the other end the hosts came close to going ahead once again, a one-two on the edge our box saw the ball played through to Charlie McNeill who took aim and subsequently found the side netting of Mikki van Sas’ goal.
It was the City No.1 who made a sensational stop a minute before the break.
Kobbie Mainoo’s quick feet saw him make some room for himself before letting fly, but a brilliant one-handed save from van Sas prevented the Red Devils retaking the lead.
City had to be alert in the opening stages of the second half, a flurry of passes saw the ball fall to McNeill but his shot was well blocked by Finley Burns.
After that we began to dominate, a flowing move down the home side’s right saw Borges break free before setting up Bobb who pulled the ball back for Mebude, with his effort saved by the legs of Vitek in the United goal.
The home side goalkeeper was called into action once again to deny Breckin moments later.
Just like the first half our pressure paid off, a counter-attack of the highest quality saw Mebude race down the right before drilling a ball across the face of the goal for Borges to tap home and net his second of the game.
The provider became the goalscorer as Mebude gave City a 3-1 lead with 12 minutes of the game left, Borges set him away before he raced past his man and finishing in impressive style.
Borges wrapped up his hat-trick two minutes later, the winger beat his man before firing the ball past Vitek at his near post.
Striker Dickson got in on the act after he picked off a loose ball after some sloppy United passing, he took his time before rolling the ball into the bottom-right corner.
There was enough time for Borges to add another, he struck on the 89th minute to seal a derby day victory that will live long in the memory for these City youngsters.
HOW WE LINED UP
We played in our usual 4-3-3 formation.
Mikki van Sas was named in goal with Ezra Carrington, Finley Burns, Jadel Katongo and Josh Wilson-Esbrand making up the back four.
Captain Shea Charles played just in front of the back four providing that extra bit of defensive cover with Kian Breckin and Oscar Bobb the more attacking of the midfield three.
Striker Will Dickson lead the line with Carlos Borges and Dire Mebude on either wing.

WHAT IT MEANS
The three points mean we jump to the top of the Premier League 2 table with 21 points after 11 games.
Arsenal are just behind us on 20 points and have a game in hand.
